7-Up Peach Melba

Rasberries and peaches combine with 7-Up to make a sweet, fruity sauce.
Course: Dessert

Ingredients
  

  • 3 tablespoons sugar
  • 2 tablespoons cornstarch
  • 1 7-oz. bottle 7-Up
  • 1 10-oz. package frozen raspberries thawed
  • 1 1 lb. can peach halves drained
  • Ice cream

Method
 

  1. Combined sugar and cornstarch in a saucepan. Whisk in 7-Up soda. Cook over medium heat, stirring occasionally, until thickened. Add in raspberries. Continue cooking until thickened and heated.
  2. Strain the sauce through a strainer to remove the berry seeds. Cool the sauce.
  3. When ready to serve, place a peach half into each serving dish and top with a scoop of ice cream. Spoon the sauce over the top and serve.
