The latest in food trends: Diets and Satiety
According to the Jan-08 issue of Baking Management magazine, an industry magazine for the processors and producers of, and suppliers or brokers to, the professional baking industry, bakers may be looking into what makes consumers happy (ie, satisfying flavors, relief of hunger) by developing items that offer more ‘pow’ or volume while still producing it with few calories. ‘Satiety’ reflects not the quantity the consumer eats per se, but how full and satisfied after eating it that same consumer feels. Satiety may be a new buzzword with the health food industry.
